Campfire Cooking: Mealtime Made Easy
Heavy aluminum foil and a few coffee tins make for a fun and easy way to cook a full-course meal – camper-style! Cooking over hot coals and an open flame can be fun when you are camping. Listed below is a favorite fool-proof meal that the entire family can help prepare. Even the novice of campers will find this meal to be simple and easy to make over a campfire.
Campfire Appetizer
Pigs In A Blanket (also great for a late night snack while singing campfire songs)

1 pkg. wieners
1 pkg. refrigerator biscuits
Put wiener on stick. Wrap dough around wiener and roast until dough is golden brown.
Main Course
Grilled Ham

1 lb. canned ham
1 sm. can sliced pineapple
Glaze:
¼ c. brown sugar
2 tsp. butter
Mix melted butter and brown sugar. Place ham in a piece of heavy aluminum foil. Spoon the glaze on top of ham. Add slices of pineapple. Wrap foil over ham and grill over fire. Approx. grill time = 30 minutes.
Baked Fried Potatoes

Potatoes (red, white, or yellow)
Pat of butter
1 tsp. water
Salt/Pepper to taste
Sliced onion or mushroom, optional
Cut potatoes into small cubes or thin slices. Wrap the above ingredients in foil and place on grill. Turn frequently to get an even cook. Cook time= 20 minutes.
Forego the appetizer and add a fresh mixed salad to your main course to get a well balanced meal.
Dessert Campfire Style
Coffee Can Cake – A Girl Scout Favorite

4 (2 lb.) coffee cans
1 pkg. white or yellow cake mix
2 cans fruit pie filling, use reduced sugar for a lighter calorie version
Whipped topping, optional
Lightly grease cans with non-stick spray and place ½ can of pie filling in each. Make cake batter according to directions and divide it between the four cans. Cover tightly with foil. Place on grill over embers and bake slowly, rotating the can now and then. You may test for doneness as in an oven-baked cake. Approx. cook time = 30 minutes.

Thank you for sharing such interesting posts and recipes. I love all the ideas and photos. One of these days I will be able to travel and go camping. We did a lot of camping with our theatre friends and boys when they were young. Was getting to point where I could get the tent up by myself before we had to stop. I had to divorce my husband:-)
